½ cup oil
1½ cups sugar
2 tsp lemon extract
2 cups grated zucchini
1 tsp baking powder
1 tsp salt
1/2 cup raisins
1 cup crushed pineapple
1 tsp soda
3 cups flour
1 cup pecans, chopped

Directions:

Preheat oven to 325º
Grease and flour 2 full size loaf pans

Mix together eggs, oil, sugar, and extract. Add remaining ingredients. Divide evenly between the two loaf pans. Bake 1 hour.
