2 or more pounds of sweet potatoes, peeled and sliced into 1 1/2 inch slices. About 7cups
6 T butter
3 T honey
1/2 lemon, squeezed
Salt and Pepper

Directions:
Directions:
Preheat oven to 350 degrees.
Arrange potato slices in a glass baking dish that has been sprayed with Pam. Melt and butter and stir in the honey and lemon juice. Pour over the potatoes to coat. Turn each slice over and spoon more sauce over them. Salt and pepper to your taste and bake about 50 minutes or until tender. Stir and and baste occasionally while baking.
