12 large Jalapeno peppers
2 links Mexican Chorizo, casings removed
½ lb smoke gouda cheese, shredded
¼ cup finely chopped red onion
1 egg
½ cup cream cheese, room temp
3 Tbsp Sour Cream
1 Tbsp hot sauce
Salt and pepper to taste

Preheat oven to 375º

Cut the peppers in half, de-seed. (I like to leave the stems on, but you can remove those too!)

Brown Chorizo in a skillet over medium-high heat, about 8-10 minutes. Cook it until the grease is rendered, then drain it and place it into a medium mixing bowl. Add the cheese, red onion, egg, cream cheese, sour cream, hot sauce, salt and pepper. Mix well.

Line cookie sheet with parchment paper. Arrange half-peppers on parchment paper. Spoon mixture, pressing it into each half-pepper. Bake until bubbly, about 20 minutes.

Alt: I've cooked these on the grill. They are amazing, but really messy!!
