2 cups water
4 Medium Potatoes
1 Medium Onion
1 ( 10 Ounce ) can cream of celery soup
3/4 Lb. Velveeta cheese
16 Oz. Package of mixed frozen vegetables ( chop & cook )

Directions:

1 Simmer water, potatoes & onions about 20 min.

2 Add frozen Vegetables

3 Add soup & cheese


4 Heat until Cheese is melted, stirring constantly

Found that adding cheese toward very end keeps cheese from burning or sticking to pan.
