1 lb. Elbow Macaroni
1/2 medium Onion, finely chopped
1/3 cup All Purpose Flour (spooned and leveled)
3 cups Milk
1 lb. Cooked Shell Fish (I like to use a combination of shrimp, lobster, and crabmeat), coarsely chopped
4 cups Shredded Mixed Cheese (I like to use a combination of cheddar, swiss, and parmesan)
1/2 cup Panko Bread Crumbs
Coarse Salt
Ground Pepper

Preheat oven to 400 degrees. In a large pot of boiling salted water, cook macaroni 2 minutes less than al dente. Drain and rinse with cold water. Put macaroni in a large mixing bowl and set aside.

While the pasta is cooking, heat a small amount of olive oil or butter in a large saucepan. Add onion, cook until softened, 3 to 5 minutes. Add flour and milk, whisk until smooth. Bring to a boil, reduce to a simmer. Cook until sauce thickens, 2 to 3 minutes. Season with salt and pepper. Remove pan from heat.

Fold cooked seafood and sauce into macaroni. Transfer half of the mixture into a 9x13 glass baking pan. Layer half of shredded cheese, then half of bread crumbs on top. Repeat the process (add the remaining half of the mixture, then shredded cheese, and finishing with the bread crumbs). Bake until topping is golden and sauce is bubbling, 15 to 20 minutes. Let cook for 5 minutes before serving.
