8 Ripe Roma (Plum) Tomatoes, chopped
1/2 cup onion, chopped
5 leaves Fresh Basil, chopped
1 pinch Dried Oregano
1 dash Crushed Red Pepper
1 pinch Salt
1 pinch Black Pepper
2-3 tbsp. Extra Virgin Olive Oil
1 loaf Italian-Style (or French) Bread, cut into diagonal slices

In a large bowl, combine the tomatoes, onion, basil, oregano, red pepper, salt, pepper, and olive oil. Use more olive oil, if necessary, to coat the entire mixture. Allow the tomato mixture to sit for 10-15 minutes so the flavors can blend.

In the meantime, preheat the broiler. On the baking sheet, arrange slices of bread in a single layer and brown both sides slightly in the oven. Remove the slices from the oven. Spread the tomato mixture on the warm slices of bread and top with mozzarella. Place in oven and heat until cheese is melted.

Remove from oven, let cool a few minutes, and serve.
