2-8 oz. chicken breasts, cut in 1 inch thick chunks
2 T. Sesame oil
¾ cup water
2 T. corn starch
2 T. rice vinegar
3 T. ketchup
⅔ cup white sugar
1 medium green pepper, cut into small chunks
1 medium red pepper, cut into small chunks
1-8 oz. can pineapple tidbits+liquid
¼ tsp. red food coloring
1 tsp. red pepper flakes(for spicy)
1 large tomato, cut into wedges
1 T. toasted Sesame seeds
3 cups cooked white rice




Directions:
Directions:
In 10 inch skillet stir and cook chicken in oil about 5 minutes.
Meanwhile in 5 quart saucepan on med-high heat, cook water,
corn starch, vinegar, ketchup and sugar to a full boil, stirring
constantly. Lower heat to medium, add peppers, pineapple and cooked
chicken stirring until heated through and the sauce is
thickened. Stir in red pepper flakes if desired and food coloring. Remove from heat.
Pour into large serving bowl, top with tomato and sprinkle with
Sesame seeds. Serve over rice. Serves 4 to 6.
