4 medium potatoes, cooked
1 cup (250 mL) mayonnaise
½ cup (125 mL) sour cream
¼ cup (60 mL) milk
2 eggs, beaten
2 tsp (10 mL) mustard
¼ cup (60 mL) grated strong Cheddar cheese

Directions:
Directions:
Mash potatoes with mayonnaise, sour cream, milk, eggs and mustard.
Spoon into a greased ovenproof dish and top with cheese. Bake at 350ºF (180ºC) for 20 - 30 minutes.

Tasty Variations:
Replace mayonnaise with 1 cup (250 mL) sour cream and ½ cup (125 mL) milk.
Sprinkle 4 slices diced and cooked bacon on top with the cheese.
