Mary Ola’s Steamed Cabbage Recipe

I small head if cabbage, cut into small sections.
1 small vidalia onion, sliced in sections
1/2 red onion sliced into sections
4-5 slices of cooked bacon, crumbled into pieces.
1/4 cup of apple cider vinegar
1 heavy Tablespoon sugar
About 1/8 teaspoon red pepper
Salt and pepper to taste

1.In a large skillet fry bacon until crisp-set aside and crumble.
2.Add sliced onions and cabbage to pan with bacon grease. Salt and pepper to taste.
3.Cook over medium heat. Sauté uncovered for about 10 minutes, then when you see the onions and cabbages browning and wilting cover with lid . Stir occasionally and turn down to low heat.
4. Mix approximately 1/4 cup of apple cider vinegar to a tablespoon of sugar and stir. ( I taste to see if the balance is sweet and sour. I guess at sugar). Add red pepper to vinegar mixture and stir well.
5. Stir vinegar mixture into cabbage. Add bacon; stir and cover with lid.(I like to sometimes leave the kid slightly off for extra moisture to evaporate)
6. Summer cabbage covered until completely wilted and caralmalized. (Yummy)

Great side dish that is easy and delicious! Red onions add a pretty color and give an appetizing appearance!

I have changed Mother’s recipe by adding the sweet and sour vinegar mix. This is another main staple that I cook often for my family, The bacon adds so much to the flavor and in the South, bacon drippings were used in vegetables to season giving them a delicious taste!

Mother added bacon drippings to peas and other dishes also!

Yummy! I think Mother would love the changes to her recipe!
