4 pounds ground beef
20 Townhouse Crackers, or similar (crushed)
3/4 cup Salsa (I use Mild-Medium)
1 Can Cream Of Mushroom Soup
1 Really large Onion (chopped) We like onions!
2 teaspoons black pepper
2 teaspoons Garlic Powder
1/2 cup Ketsup
3 Eggs (slightly beaten)
1 Tablespoon Onion Powder
1 teaspoon Salt
3/4 cup Quick Cooking Oats

Preheat oven to 350 degrees.
I use a Kitchen Aid mixer so, I mix all of the ingredients in the mixer bowl and use the dough hook to mix. Stop mixer frequently and scrap bowl with a spatula. Continue to do this until all ingredients are well blended.

I use a 9"x13" sprayed metal cake pan. I split the mixture in 2 parts and make two loaves in the pan. It cooks much better this way and if you don't need all of the meatloaf now you can remove one loaf and freeze it for later.

Place in oven and bake about 1 hour or until internal meat temperature is at least 165 degrees. About 10 -15 minutes before the meatloaf is done I add ketsup (or you can use BBQ sauce) to the tops of the meatloaves.
If you add the ketsup when you first put it in to bake it may burn.
