1 cup butter
1 cup Crisco
1 cup sugar
1 cup powdered sugar
2 eggs, beaten
2 1/2 tsp. almond extract or vanilla or lemon (whichever you like)
1/2 -1 tsp. lemon extract
1 tsp. soda
1 tsp. cream of tartar
1/2 tsp. salt
4 1/2 cups flour
another small amount of granulated sugar
small amount of super fine sugar

Directions:

Cream together the butter, Crisco, sugar and powdered sugar
Then add the beaten eggs, almond or vanilla extract, and lemon extract (Grandma Almquist used part vanilla and part lemon)
Combine soda, cream of tartar, salt and flour and add to other ingredients
Stir/blend well.
Roll into balls and place on a cookie sheet
Dip the bottom of a glass in water then granulated sugar and flatten the balls very thin.
Bake at 375º for 10-12 minutes
After baking you can sprinkle a little super fine sugar if desired

To make like refrigerator cookies - make into rolls and chill.
When ready to bake - let rolls set at room temp until soft,. Slice very thin and sprinkle with sugar
Bake at 375º for 10-12 minutes

(Grandma said that this was easier than rolling out and cutting the dough like Aunt Betty (Almquist) - know she used THICK sour cream and REAL butter).
