16 lemons
2 liters vodka
6 c. granulated sugar
3 c. water

1. Using a knife, remove the zest - with little or no pith - from the lemons in strips. In a gallon glass container, combine the lemon zest and vodka, cover tightly, and let stand in a cool dark place for 4 weeks.
2. Strain the vodka mixture through a large paper coffee filter and fine-mesh sieve, into a large bowl or pot. In a saucepan, combine the sugar and water and bring to a boil over high heat, stirring to dissolve the sugar. Remove from heat and let cool completely.
3. Pour the sugar syrup into the strained vodka, mix and divide into bottles. Cap and store in a cool, dark place. Keep a supply in the freezer for up to 1 year. Serve directly from the freezer.
