Ingredients: 2 large baking potatoes 1/4 c. Kraft Zesty Italian reduced fat dressing 1 pouch Shake 'n Bake extra crispy seasoned coating mix 1 lb. white fish fillets, such as haddock, halibut or cod 1/4 c. Miracle Whip Light dressing

Directions:Preheat oven to 400º. Cut each potato lengthwise into 8 wedges. Toss potatoes in a bowl with the Italian dressing. Arrange, cut sides down, on large baking sheet coated with cooking spray. Bake 15 minutes.
Meanwhile, reserve 1/4 c. of the coating mix for the potatoes; set aside. Place the remaining coating mix on a plate. Spread one side of fish fillets with half of the Miracle Whip. Dip fish in coating mix. Turn over and brush the other side with the remaining Miracle Whip, followed by the coating mixture.
Remove the potatoes from the oven; turn over and arrange around the outer edges of the baking sheet. Place fish in the center of the baking sheet. Sprinkle the reserved 1/4 c. coating mix over the potatoes. Bake 15 minutes or until the fish flakes with a fork and the potatoes are tender. Makes 4 servings. |
