6 oz. pkg. long grain and wild rice
8 oz. fresh goat cheese (chevre), divided
1/4 t. garlic powder
1/4 t. basil
1/4 t. pepper
6 chicken breast skinless and boneless, halved
2 T. water
3/4 c. crushed cornflakes cereal
tomato wedges and fresh basil for garnish

Directions:
Directions:
Cook rice per directions and set aside to cool. Combine 6 oz. goat cheese and next 3 ingredients, stirring until well blended.
Add 1 c. cooked rice and stir well, set aside.
Place each breast half between 2 sheets heavy plastic wrap and flatten to 1/4" thick. Spoon 1/4 c. rice mixture onto center of each breast and fold edges of chicken to center to enclose mixture. Secure with a wooden pick. Mix rest of goat cheese and water and pour over chicken. Sprinkle with cornflakes.
Bake at 350º for an hour. Cover with foil the first half hour.
