1/4 c. Dijon mustard
1/4 c. bourbon
1/4 c. brown sugar
1 t. Worcestershire
1 t. salt
2 scallions, thinly sliced
4 - 6 boneless, skinless chicken breasts pounded to 1/4" thick
1 T. margarine
1 T. oil

Directions:
Directions:
Combine mustard, bourbon, brown sugar, worcestershire, salt and scallions in a non-metal dish. Place chicken in mixture and turn to coat. Cover and marinate for 1 hour - reserve marinade.
Heat margarine and oil in heavy skillet on medium high heat. Saute chicken 3 - 4 minutes per side until golden brown. Remove chicken, pour off fat and add marinade. Stir and heat to boiling. Serve over chicken.
