2 - 3 T. peanut oil
2 1/2 lbs. chicken, cut into chunks
2 cloves garlic, minced
1 T. curry (I use more)
1 onion, chopped
1 red bell pepper, julienned
1 16 oz. can tomatoes
1 large banana, chunked
1/4 c. coconut
2 T. peanuts

Directions:
Directions:
Brown chicken on all sides in oil and remove from pan. Add garlic and onion, sauté for 5 minutes. Add chicken, peppers and tomatoes and simmer for 40 minutes. Add coconut, banana, and peanuts. Toss with chicken. Heat together until last three ingredients added are warm. Serve with rice.
