2 tbsp. coconut oil
4 cloves garlic, minced
4-5 chicken breasts, diced
4 tbsp. soy sauce
2 lemons, zested and juiced
4-5 tbsp. honey
1 tsp. poppy seeds

Butter lettuce leaves
4-5 carrots, shredded

Directions:
Directions:
Cook garlic for 30-45 seconds in melted coconut oil. Add chicken and soy sauce; cook until chicken is no longer pink. Add lemon juice and zest, honey, and carrots. Turn heat to medium and cook until honey is caramelized. Toss in poppy seeds.

Serve in lettuce leaves topped with carrots and freshly squeezed lemon juice.
