6 - 6 oz. beef tenderloin filets
3 tbsp. butter
2 tbsp. olive oil
¼ c. brandy
¼ c. shallots, minced
½ c. parsley
1 c. mushrooms, sliced
1 tbsp. Worcestershire Sauce
1 tbsp. steak sauce
½ tsp. Dijon mustard
½ c. Madiera
salt and freshly ground black pepper

1. Pat the filets dry with a paper towel. In a large skillet over high heat, heat together the butter and olive oil. Add the filets and brown quickly on both sides. Pour the brandy over the meat: carefully ignite. Let the flames burn out; transfer the meat to a platter. Pour off most of the butter and oil.
2. To the same skillet, add the shallots, parsley, mushrooms, Worcestershire Sauce, steak sauce, mustard, Madiera and salt and pepper to taste and bring to a boil; simmer for 2 minutes.
3. Return the beef to the skillet for a minute or two. Place week back on platter; pour sauce over. Serve with egg noodles.
