1 package active dry yeast (2½ tsp.)
1 tsp. sugar
1 c. warm water (do not exceed 120º F)
3 tbsp. olive oil
2 c. all purpose flour, plus more for dusting
1 tbsp. Kosher salt

PIZZA TOPPING
2 c. of your favorite pasta sauce (gravy, if your are Southern Italian)
2 white onions, sliced as thin as possible
4 tbsp. butter
salt and freshly ground black pepper
2 tbsp. sugar
1 tbsp. brown sugar
6 oz. button mushrooms
1 portabella mushroom
6 oz. shitake mushrooms
½ package Boursin cheese
6 oz. Fontina cheese, shredded

PIZZA DOUGH
1. In the bowl of a standing electric mixer fitted with a dough hook, combine the yeast, sugar and warm water, still gently to dissolve. Let the mixture stand until the yeast comes alive and starts to foam, about 5 to 10 minutes.
2. Turn the mixer on low and add the flour and olive oil. Add the salt and mix at the slowest speed until all the flour has been incorporated. When the dough starts to come together, increase the speed to medium. Stop the mixer periodically to scrape the dough off the hook. Feel the dough by squeezing a small amount together: if crumbly, add more water; if sticky, add more flour - 1 tablespoon at a time. Mix until the dough gathers into a ball, about 5 minutes.
3. Turn the dough out onto a lightly floured surface and knead until smooth and elastic. (Or buy the prepared dough at Trader Joe's™.) Place in a lightly oiled bowl, turn the dough over to coat, Cover with plastic wrap or a damp towel and let rise until doubled in size, about ½ hour.
4. Roll or pat the dough until it is about ½-inch thick.

PIZZA TOPPING
1. Preheat oven to 450º F.
2. To prepare the caramelized onions: In a large saucepan over medium heat, combine 2 tablespoons butter and sugars. Add the onions, slat and pepper and cook until the onions are tender and caramelized, about 20 minutes.
3. To prepare the mushrooms: Remove the stems from all the mushrooms and gills from the portabella mushroom and slice thin all the mushrooms. In a large saucepan over medium-high heat, melt 2 tablespoons butter. Add the mushrooms, salt and pepper and cook until tender.
4. To assemble the pizza, spread the pasta sauce over the dough, Top with mushrooms, onions and cheeses. Bake for 20 to 25 minutes.
