Pizza Dough (will make 8 pizza rolls)

1 c hot water
1 T Yeast
2 T Olive Oil
2 t sugar
1 t salt
3 c flour

8 cheese sticks
Pizza sauce

Pizza toppings of your choice:
Pepperoni
Diced Ham
Chunked pineapple
Sausage
Olives
Onions
Peppers
Mushrooms

If you have rapid rise yeast, mix the yeast, sugar, salt, and flour in your mixer. Add the hot water and oil and immediately mix on medium for 5 minutes. If you have active dry yeast, sprinkle it on top of the water w/ a little sugar and let it proof for 5 minutes, or until the yeast starts blossoming on the top. While waiting, mix the other dry ingredients in mixer. When yeast is ready, add the oil and pour it all into dry ingredients. Mix for 5 minutes on medium. If it isn't coming together, drizzle a little more oil in. You can use either the paddle or the bread hook, but with either you will probably have to lock it down, it starts to jump around. Turn out on to floured surface and put mixer bowl over. Let sit for 5 minutes to rise a little. Cut into 8 equal pieces. Roll into rectangular shape, put a string cheese and other toppings at one of the short ends. Fold the sides in over the end of the cheese and roll up. Bake at 375 for 12-15 minutes or until slightly golden on the top. Serve with pizza sauce for dipping.
