3 cups of flour
2 eggs
½ tsp salt
7/8 cup of water
2 Tablespoons of sour cream

Directions:

1. Mix all ingredients together.

2. Knead and cover with a bowl.

3. Let rest for 10 minutes.

4. Roll dough to a thickness of ⅛ inch thickness.

5. Cut into 3 inch squares.

6. Put a small amount of filling in the center of each square.

7. Apply moisture to the edges of the square by dipping a finger in water and going around the dough square.

8. Fold square in half, usually diagonally.

9. Press edges together. Seal by crimping edges with a fork.

10. Drop sealed pierogis in boiling water.

11. Boil for 10 minutes.

Some of the common fillings for pierogis are mashed potatoes, mashed potatoes and cheese, saurkraut, mashed potatoes and saurkraut, onions added to anything, prunes, and anything you desire. After boiling, some people like to brown them in butter. Many top with sour cream. You really can't go wrong. Enjoy!
