4 to 6 boneless, skinless chicken breasts, quartered
½ c. flour
Butter as needed for cooking/browning the chicken
Salt and pepper
1 ½ c. fresh mushrooms, sliced
¾ c. white cooking wine
½ c. chicken broth
½ fontina or 1 c. Mozzarella cheese, shredded
½ c. Parmesan cheese

Directions:

Pound chicken to around ⅛ inch thickness. Coat with flour. Brown in butter for 3 to 4 minutes on each side. Put in a 9x13 inch pan. Sprinkle with salt and pepper. Reserve drippings. Next, saute mushrooms in 2 tablespoons butter and drain. Sprinkle over chicken. Stir the wine and chicken broth in drippings in skillet. Simmer for 10 minutes. Add ½ tsp and ¼ tsp pepper. Spoon sauce over chicken. Combine cheeses and sprinkle over everything. Bake, uncovered , in 350º over for 45 minutes to 1 hour.

Can be prepared the day before. Follow all of the same steps, but before baking, cover with foil and refrigerate. Serve with noodles.
