1 ½ lb. ground beef
¾ c. rolled oats
1 (5 oz.) can water chestnuts, chopped
½ tsp onion powder
1 tsp soy sauce
1 egg
½ c. milk
½ tsp garlic salt
1 (8.5 oz.) can crushed pineapple
1 c. brown sugar
1 c. beef broth
½ c. vinegar
2 Tbsp soy sauce
2 Tbsp cornstarch
¼ c. water
½ c. yellow bell pepper, chopped
½ c. carrot, diced and cooked

Directions:

Mix together meat, rolled oats, water chestnuts, onion powder, 1 tsp soy sauce, egg, milk, and garlic salt and form into 1 ½ in. balls. Bake at 400º until brown; set aside. Drain pineapple into a large saucepan. Add brown sugar, broth, vinegar, and 2 tablespoons soy sauce and bring to a boil. Mix cornstarch and water. Add to pineapple and boil to a thin sauce. Add peppers, carrots, and meatballs and let simmer for 10 minutes. Serve over rice.
