Dressing:

1/2 c vegetable oil
1/4 c apple cider vinegar
1/4 c sugar
2 1/2 T very finely chopped fresh parsley
1 t kosher salt
1/4 t sriracha

Salad:

2 bunches of fresh spinach or 1 bag hearts of romaine lettuce (whichever your prefer)
1-2 11 oz cans mandarin oranges, drained
1 c thinly sliced red onions

Candied Almonds:

1 c sliced almonds
1/3 c sugar

Dressing:

Combine all ingredients, shake well in a well sealed container, refrigerate for at least 30 minutes.

Candied Almonds:

Stir the almonds and sugar in a small pan over medium heat until the sugar has melted and begins to caramelize. Pour into a metal container and allow to cool (the caramelized almonds will be very hot). Once cooled, break apart and store at room temperature in a sealed container.

Salad:

Place the salad ingredients in a large serving bowl. Shake the dressing and pour over salad.The amount of dressing will depend on how much lettuce/spinach you have. Add enough to lightly coat the salad. Add almonds before serving.
