1 c. butter
1 1/2 c. white sugar
2 eggs
1 egg yolk
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. oats
1 1/2 c. coconut
1 pkg. chocolate chips (optional)

Directions:

Preheat oven to 350ºF (175ºC).

Cream butter and sugar together. Beat in eggs, yolk, and vanilla.

Combine flour, baking powder, baking soda, and salt together in a separate bowl. Fold into butter mixture. Stir in remaining ingredients. Drop onto a metal** cookie sheet, spaced far apart as they spread. Bake for 11 minutes.
