2 tbsp. olive oil
4 tbsp. flour
1 onion, chopped
1 green pepper, chopped
1 celery stalk, chopped
5 c. chicken stock
1 - 14 oz. can tomatoes
3 garlic cloves, chopped
1 - 4 1/2 oz. can okra and stems
1/2 hot pepper, chopped
4 tbsp. white rice
2 c. cooked chicken, cubed
4 oz. garlic sausage, cooked
Salt and pepper to taste

Directions:
Heat oil in large pot, stir in flour. Cook about 15 minutes, stirring occasionally until mixture is rich golden brown. Add onion, pepper, and celery; continue cooking about 10 minutes until onion is soft. Slowly pour in stock and bring to boil. Stir well, scraping bottom of pot to get all flour off. Add tomatoes and garlic. Stir in okra, hot pepper, and rice; season to taste with salt and pepper.

Reduce heat, cover and simmer for 20 minutes or until okra is tender. Add meat and continue simmering for 10 minutes.
