Fresh tomatoes
Kosher salt
White sugar

Directions:
Directions:
Blanch tomatoes. Cut into fours. Stuff jars full of cut tomatoes. Add 1 teaspoon of kosher salt and 2 heaping teaspoons of white sugar per jar. Seal jars with sanitized lids. Place in a canner with hot water (jars should be fully covered) and boil for 20 minutes.

Optional: put a small bit of tomato juice to top off jars for colour.
