1/3 pkg bacon or salt pork
4 large onions, peeled and diced
6 large potatoes, peeled and diced
6 c chicken broth
2 1/2 T flour
1/2 c cold water
1 t salt, more if you like
1/2 t pepper, more if you like
1/2 t sugar
1/4 t sage
I also add a little chives, thyme, rosemary

Directions:
Directions:
Slice and dice bacon, brown in a heavy soup pot. If using salt pork, skip this step. Add chicken broth, potatoes, and onions. Bring to a boil, lower heat and cook gently for 30 minutes or until potatoes are tender. Blend together flour, water, salt, pepper, sugar, sage, chives, thyme and rosemary. Add 1 cup of soup stock to flour mixture, stirring until smooth, then mix into soup pot. Bring to a boil, then reduce to low. Serve hot, sprinkle with butter, green onion and additional sage.
