Daddy's "Dirty" Rice Recipe

1 lb. breakfast sausage
1 onion (diced)
2 or 3 stalks celery (thinly sliced)
½ red bell pepper (diced)
1 clove garlic (finely chopped)
3 cups cooked white rice (from 1 cup uncooked rice)
⅔ cup frozen green peas
1 Tbs. chopped parsley
pinch of crushed red pepper
salt and pepper to taste

Directions:
Directions:
In a skillet, cook the sausage half way then add the onion, celery, bell pepper and garlic. Add the salt, pepper and crushed red pepper.
When sausage and vegetables are done add the frozen green peas and cook for 2-3 minutes.
Add the cooked rice and parsley, stir to heat through and check seasoning.


Variation:
Leave out the sausage and add sliced mushrooms to the vegetable mix.
When vegetables are done, add the green peas and 1 crushed chicken bouillon cube with ¼ cup water, cook for 2-3 minutes, add the rice and parsley..

This variation is a great side dish for chicken or fish.

Daddy always made this for Thanksgiving and any other special occasions. I grew up eating his version of "dirty" rice and had no idea that traditional dirty rice was made with liver...yikes! I am forever grateful for Daddy's version!
