1 box of Yellow Cake Mix (I use Duncan Hines)
1 11 oz. can of Mandarin Oranges with juice
4 eggs
1/2 cup vegetable oil

Icing Recipe
1 20 oz can crushed pineapple in juice
1 8-9 oz of whipped topping
1 3 oz vanilla instant pudding mix (do not cook)

Mix cake mix, oranges and juice, eggs and oil in electric mixer until orange slices are broken up and batter is fluffy - about 3 minutes.

Divide among three greased and floured 9-inch layer cake pans and bake at 350°F, about 20 minutes or until cake tests done. (stick a tooth pick or fork in the middle and if it comes out clean it is done)

Cool on rack.

When layers are cool, ice between layers, sides and top.

Icing directions:
Blend pineapple and juice, whipped topping and dry pudding mix until well mixed. Keep under refrigeration until used.

This is an easy cake to make and everyone LOVES it. In fact if you are not a baker this one will make you look good. This is a moist cake and the icing hides a lot of the mistakes.
