3/4 lb. bacon, finely chopped
1 medium onion, chopped
30 oz. package hash browns, thawed
8 eggs
1/2 t salt
1/4 t pepper
1 c. cheddar cheese, shredded

Directions:
Directions:
Cook bacon and onion until bacon is crisp, drain and keep
1/4 c. drippings. Stir in hash browns. Cook uncovered for
10 minutes or until bottom is golden then turn hash browns. With back of spoon, make 8 wells in potato mixture. Break 1 egg into each well and sprinkle with salt and pepper. Cook covered over low heat for 10 minutes or until eggs are set and potatoes are tender. Sprinkle with cheese and let stand as cheese melts.
