Ingredients:  
4 medium eggplants (2 cut and cubed and 2 halved)
2 medium onions
3 Tbls butter
3 Cups Crumbled feta cheese
1/2 cup grated parmesan cheese
1/4 cup Ricotta cheese
1 egg 2 Tbls chopped parsley]
Seasoned salt

Directions:
Directions:
Saute onions in butter until golden brown
Add eggplant cubed if making casserole, saute 5 minutes, let cool
add cheeses - beat ricotta with eggs and parsley
Add salt

If stuffing eggplants then stuff and bake for 35 to 40 minutes
