5 cups diced rhubarb
1 cup sugar
2 T cornstarch
1 cup water
1 tsp vanilla
1 cup brown sugar
1/2 cup butter
1 cup flour
3/4 cup oats

Directions:
Directions:
Put the rhubarb in a 3 quart glass dish that has been sprayed with Pam.

Mix the sugar, cornstarch, water and vanilla in a saucepan and cook until thickened and clear. l Set aside.

Mix the melted butter, brown sugar, oats and flour together until it is crumbled. Sprinkle this over the rhubarb, covering completely. Pour the glaze evenly over the top of your rhubarb mixture. Bake in a 350 degree oven for about an hour until bubbly and brown.

This is a recipe from Roger's mother, Marie Hartwig. I now have to grow rhubarb to keep Roger happy!
