Coconut Cake

3 Egg Whites
1½ Cups Sugar
⅜ Cups Shortening
3 Egg Yolks (Optional, Betty leaves these out for a fluffier cake)
½ Cup Coconut
2¼ Cups Plain Flour
2½ Teaspoon Baking Powder
½ Teaspoon Salt
¾ Cups Coconut Milk

Beat egg whites until stiff, beat in ½ cup sugar, little at a time, cream shortening, add 1 cup sugar. Add egg yolks (if used) beaten well. Add dry ingredients with coconut milk, add coconut then fold in egg whites. Cook 30 to 35 minutes at 350º
 

Coconut Cake Filling

2 Cups Sugar
2/3 Cups Coconut Milk
1 pack frozen Coconut
2 Cups fresh Coconut
2 Egg Whites
Vanilla

Directions:
Directions:
Combine sugar and coconut milk, cook until syrupy, add coconut, cook 1 minute, fold in well beaten egg whites, add vanilla.
