Ingredients:  
3 cans shoe peg corn (you can use whole kernel corn if you prefer)
½ diced red onion
1 lime squeezed
1 teaspoon of sugar
¼ teaspoon salt
1 avocado diced
*All ingredients can be changed to your taste preference.

Directions:
Directions:
In a large bowl, combine corn, onion, lime juice, sugar and salt. Mix well.
2. Stir in avocado.
3. Serve immediately with tortilla chips. I have also put this over chicken breasts.
