1 1/2 cups of self rising corn meal
2 eggs
1 cup of buttermilk
2/3 cup of vegetable or canola oil
1 big teaspoon of chopped and drained pimentos
1 jalapeño- more if you prefer
1 can of cream style corn
sharp cheddar cheese- optional

Directions:
Directions:
Preheat oven to 350º
Mix all ingredients in a bowl
Spray 9x13 pan or muffin tin with non stick cooking spray
Pour into pan or muffin tin
Bake for 40-45 minutes
