2 tbsp butter
3 cloves garlic, minced
1 onion, thinly sliced
1 tsp each dried thyme and salt
¼ tsp pepper
¼ cup all purpose flour
3 cups milk
1 tbsp grainy or dijon mustard
1½ cups diced smoked ham
6 medium potatoes, peeled and thinly sliced
1 cup shredded cheddar or gouda cheese

Preheat oven to 350º F. Lightly butter 13x9 glass baking dish.
In a large pot, melt butter over medium heat; add garlic, onion, thyme, salt and pepper. Cook for about 5 minutes or until softened, stirring occasionally. Sprinkle with flour; cook, stirring, for 30 seconds. Gradually whisk in milk and mustard; bring to a boil, stirring. Keep stirring about 5 more minutes or until thickened. Remove from heat, stir in ham. Add potatoes; toss gently to coat in sauce.

Spread evenly into prepared dish. Sprinkle with cheese. Bake, uncovered, fr about 50 min or until golden and bubbling and potatoes are tender. Let stand for 10 minutes before serving.
