1 ½ c. shredded zucchini
1 c. flour
1/2 c. cocoa powder
1 t. baking soda
1/4 t. baking powder
1/4 t. salt
1/2 t. cinnamon (optional)
1/2 c. oil
1/2 c. sugar
1/2 c. brown sugar
2 eggs
1 t. vanilla
1/2 c. chocolate chips

Directions:

Preheat oven to 350º. Squeeze excess moisture from zucchini. In a bowl, combine oil, sugars and vanilla. Mix in eggs and zucchini. In a separate bowl, combine flour, cocoa, baking soda & powder, salt & cinnamon.

Add dry ingredients to the wet ingredients. Mix until combined. Fold in chocolate chips. Pour batter into greased loaf pan(s). Bake mini loaves for 30 minutes and regular loaf for 45 minutes, or until knife comes clean.
