3 cans (14 oz each) chicken broth
½ cup uncooked long grain white rice (not converted or instant)
3 egg yolks
¼ cup fresh lemon juice
¼ tsp salt
⅛ tsp ground white pepper
4 thin slices lemon (optional)
4 tsps finely chopped parsley (optional)

Directions:
Directions:
Stir chicken broth and rice together in a slowcooker. Cover and cook on high 2-3 hours or until rice is cooked. Turn to low. Whisk egg yolks and lemon juice together in a medium bowl. whisk large spoonful of hot rice mixture into egg yolk mixture. Whisk back into slow cooker. Cook on low 10 minutes. Season with salt and pepper. Ladle soup into serving bowls and garnish each bowl with slice of lemon and 1 tsp chopped parsley, if desired.
