Carla ‘s famous cheese grit Souffle

HI Nola,


1 9x13 pan, grease bottom of pan or spray with cooking oil

1 1/2 cups grits
6 cups water. cook grits according to package directions.

Allow the grits to cool some and then add:

3 eggs beaten
1 lb grated or finely cubed longhorn or other cheddar cheese.
1 tsp salt
3 tsp savory/seasoning salt
1 stick of butter or margarine ( I have used less and it doesn't seem to effect flavor)
1 can diced green chilies(optional) I use mild or medium usually.

Pour mixture into 9x13 pan sprinkle top with Paprika and bake at 350 for about 45 min to 1 hour or until it is set(doesn't jiggle in the pan)

If you want a little spice you can use hot canned chilis or add a bit of tabasco or other hot sauce. I usually just have it on the side for individuals to add on their own.

This can be made ahead and baked in the morning for breakfast or reheated. Makes a good side dish.

These grits were served at a Garden Club meeting. I just met Carla that day. She was frustrated because she couldn't find white grits and had to order them online. I checked my grits at home and had white one, so send her a pic and where to find them. Walmart. : )
