8 ounces bacon, chopped
½ cup flour
1 tsp dry thyme
½ tsp each salt and pepper
2.5 lbs beef chuck trimmed of fat, cut into 1-inch cubes
1 medium onion, chopped
2 cups water
2 cups brewed coffee
3 tbsp. chili sauce
2 tbsp. molasses
2 tbsp. Worcestershire sauce
18 small pearl onions, peeled
6 medium red potatoes, with skins on, cut into eighths (8-ths)
4 carrots, cut into 1-inch chunks

Cook bacon until crisp in a large soup pot. Transfer to plate leaving grease in pot. In a large bowl dredge the meat in flour, thyme, and salt and pepper. Cook in hot bacon grease until browned (about 7 – 8 minutes). Transfer to plate. Cook chopped onion in pot for 1-2 minutes. Stir in water, coffee, chili sauce, bacon, molasses, meat, and Worcestershire sauce. Cook covered for 1.5 hours, stirring occasionally

Next, add small pearl onions, potatoes, and carrots. Cook another hour until vegetables are tender. Serve hot with a green salad and dinner rolls.

This recipe came from an old friend (Cheryl Weiss; hence the name) who challenged her guests to guess the secret ingredient (coffee) after serving it at another Christmas dinner.
