2 Medium Russet Potatoes
2 Tbsp Butter Melted
1/4 tsp Salt
1/4 tsp Ground Black Pepper

Cheese Sauce

1 Tbsp Butter
1 Tbsp All purpose Flour
1/2 C Half-and-Half
3/4 C shredded Gruyere Cheese
1/2 C shredded Monterey Jack Cheese
1 Tbsp grated Parmesan Cheese


Garnish

3 pieces thick-sliced Bacon cooked
1/2 tsp minced Parsley

Directions:

1. Preheat oven to 450 degrees

2. Peel Potatoes slice into bite-sized 1/4 inch slices. Toss the potatoes into a bowl with the
melted butter, salt and pepper, then spread them out onto a baking sheet and bake for 30 minutes or until edges begin to brown.

3. While Potatoes bake make cheese sauce by whisking together the butter and flour in a small sauce pan over medium low heat until bubbling, the stir in Half-and- Half. When mixture begins to bubble again, add the Cheeses and cook over medium low heat, stirring often until smooth.

4. When Potatoes are done, remove from oven and set heat to Broil.

5. Transfer Potato slices to a casserole dish and pour Cheese sauce over the Potatoes. Mince Bacon slices and sprinkle over the mixture.

6. When oven is Hot, Broil the dish for about 2 to3 minutes until the top begins to bubble and brown. When done sprinkle top with 1/2 tsp minced Parsley, serve hot.
