Half a bag of Baby Carrots
2 or 4 red potatoes (depending on size of potatoes)
1 medium sized zucchini
2 red bell peppers (or like me you can do 1 red & 1 green)
1 head of broccoli
16 ounces Smoked Beef Sausage (or your choice of sausage)
1/2 tablespoon EACH:
dried basil, dried oregano, dried parsley, garlic powder
1/2 teaspoon EACH:
onion powder & dried thyme
1/8 teaspoon red pepper flakes
1/2 teaspoon Salt
1/8 teaspoon Pepper
4 1/2 tablespoons Olive Oil (*not vegetable oil)

Prep Time: 15 mins Cook Time: 30 mins 6 servings Preheat Oven 400 degrees. Line a Large Sheet Pan with foil. Cut Up all veggies so they cook evenly. Chop Sausage into thick rounds. Mix sausage & veggies together in a large bowl. In a small bowl, mix seasonings & oil really well. Pour over sausage & veggies, toss til everything is covered (best if you pour half then toss then pour the rest). Once completely covered, pour onto foil lined pan. Place in oven for 30 mins or until veggies are cooked tender. May need to toss at 15 mins. Serve and Enjoy!
