1-2 pounds of fish fillets (I have tried Rockfish, Catfish, and Cod.)
1/2 cup flour
2 eggs
tsp or so of Old Bay
4 tbs. or so butter
4 tbs. or so oil ( the mix of butter and oil, when heated should cover bottom of pan to about 3/4 inch)

Directions:
Make a batter using flour, eggs and Old Bay Seasoning. If the batter is too thick and sticky, thin with water. Dip each piece of fish into batter. Cover the pieces thoroughly and fry in hot butter/oil mixture until golden brown. Serve hot. Makes a good fish taco as well as stand alone course.
