Mix together in blender:
1 - 16 oz. can tomatoes inc. juice
1 - 4 oz. can green chili peppers, no seeds, drained
½ tsp. ground coriander or 1 tbl. Dried
½ tsp. salt
1 cup sour cream
2-3 cups finely chopped cooked chicken
¼ cup finely chopped cooked onion


12 flour tortillas
1-2 cups shredded jack cheese

Directions:
Directions:
1. Combine first 4 ingredients and puree in blender until smooth. Add sour cream – blend. Set aside.
2. Mix together chicken, cream cheese and onion. Season lightly with salt. Set aside.
3. Warm up tortillas in microwave (can fry lightly in oil if you want – but more calories)
4. Spread chicken mixture on tortillas and sprinkle cheese over mixture. Roll up. Place each tortilla seam side down in baking dish (I put some of the tomato/sour cream mix in bottom of the pan first). Top all tortillas with mixture.
5. Cover dish with foil and bake 30 minutes at 350° remove foil and sprinkle more grated jack cheese. Return to oven to melt cheese.

Tips: dip tortillas in sauce before filling and rolling.
Note: when Im in a hurry, I make the sauce with salsa and sour cream.
