2 cups cubed cooked chicken (or turkey)
½ cup chopped cucumber
½ cup chopped celery
¼ cup vegetable oil
¼ cup vinegar
¼ cup seedless green grapes, halved.
1 11oz. can mandarin oranges, drained
2 green onions, minced
½ cup mayonnaise
lettuce cups

Directions:
Directions:
1. Combine chicken, cucumber and celery in a bowl.
2. Combine oil and vinegar; pour over chicken mixture.
3. Cover and chill 1 hour. Drain.
4. Add grapes, almonds, green onions and mayo to chicken mixture; mix well.
5. Chill at least 2 hours.
6. Serve in lettuce cups

*4-6 servings
