"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1. Boned, skinned chicken breasts – cut up into chunks. Brown in hot oil, sprinkle with Lawry’s seasoned salt. Cook until tender.
2. Wash broccoli – cut up and partially cook in microwave (unless you’re a weirdo and don’t have a microwave).
3. Wash fresh mushrooms, cut up and simmer in butter until still a little crunchy. Drain.
4. Mix together:
2 cans cream of mushroom soup,
1 can cream of chicken soup,
1-2 cups of mayonnaise, cooking sherry,
lemon juice 3-4 tablespoons
5. In a large baking casserole, layer: broccoli, chicken, mushrooms and sauce mixture.
6. Top with sharp cheddar cheese and bread crumbs on top of cheese (I crumb mine in a food processor or blender)
7. Melt 1 stick of butter and drizzle over bread crumbs.

Directions:
8. Bake in oven 350° for 40 minutes.
9. Serve over rice

I have put this in the freezer before cooking, then thawed out and baked. It's a little juicy. It is better if its cooked right away

Don't overcook the broccoli
