4 tsp veg oil divided
1 cup thinly sliced carrots
2 cups broccoli cut up
1 lb chicken diced into 1 inch pieces
¼ cup chicken broth or water
¼ cup soy sauce
3 Tbsp honey
2 tsp cornstarch
Salt and pepper

Directions:
Directions:
1. Heat 1 tsp oil in fry pan
2. Add broccoli and carrots and sauté for 4 minutes. Remove from pan.
3. Add 3 tsp oil to frypan. On high, add chicken in small batches. Cook 3-4 minutes. Remove from pan and continue cooking batches.
5. Add garlic and cook 30 sec.
6. Add veggies back and cook 2 more minutes.
7. Whisk cornstarch with 1 Tbsp cold water. Set aside.
8. Whisk honey, broth and soy sauce and pour over chicken and veggies. Cook for 1 minute.
9. Add cornstarch mix to fry pan and bring to boil. Cook until sauce thickens -approximately 1 minute.
