3-4 large cloves of garlic
1 green, red and yellow bell pepper
3-4 stalks celery
1 14.5 ounce can of diced tomatoes
1 10.5 ounce package of frozen okra
1 package of Lipton Golden Onion Soup mix
2 bay leaves
1 1/2 tbsp thyme
2 tbsp parsley
1 tsp salt
1 tsp pepper
3-4 good shakes of tabasco sauce
3 lbs shriimp
1 lb andouille sausage
4 cups fish stock or chicken stock
1/4 c flour
1/4 c crisco oil
1 can of beer
Mahatma rice

Directions:
Directions:
In a cast iron skillet (or large fry pan) make the roux with the oil and flour stirring constantly till the mixture turns a dark brown. (dont burn it)
cut up all the veggies (not the okra). When the roux is ready toss in the veggies with a small amount of water and cook for 6-10 minutes stirring constantly. Then add the tomatoes, bay leaves thyme and parsley along with the onion soup mix, salt and pepper. Add the beer and fish stock at this time also. You can also add the sausage at this time and simmer on low for about an hour. Then toss in the shrimp and tobasco sauce to your taste.
Make the rice and serve the gumbo over the rice.

I got this recipe from a true Cajun from N.O. Louisiana whom I sold a house to he and his mother then sold their house after his mother died years later.
