4 (2 lbs.) tomatoes
130g pancetta
2 garlic cloves
1/4 tsp. chilis
6 fresh basil leaves
12 oz. spaghetti
1/3 c. parmesan cheese

Directions:
Cook pasta. Drain BUT reserve approx 3/4 of water.

Score an "x" onto the bottom of each tomato. Blanch in boiling water (approx 20-30 seconds). Peel skins, seed and dice.

Cut pancetta into thin strips, cook until fat is rendered (approximately three minutes). Add garlic and chilis, then tomatoes and 3/4 of basil. Simmer for 10 minutes. Stir tomato mixture onto pasta. Add enough of reserved pasta liquid to coat; cool for one minute. Sprinkle with cheese and remaining basil.
